If you love our eggs, appreciating a delicious stew hen allows you to participate fully in the egg laying cycle. Older birds become less productive and at this time instead of shipping them away with a poultry dealer, we harvest these birds on farm to realize their full potential to nourish us.

Compared to a broiler, these birds are older and smaller. They have more connective tissue (collagen) and a deep rich flavor when compared to a young broiler. Because of this, you do not want to cook them like a broiler.

Stew hens are meant to be cooked low, slow, and with moisture….think crock pot or stock pot. You will end up with quarts of rich, nutritious broth, and fall off the bone meat to add to soup, chicken salad, chicken nachos, tacos, or quesadillas
